Canada’s Ultimate Fishing Town

The World Fishing Network (WFN) is running a contest for the Ultimate Fishing Town in Canada. Our little town of Ignace is competing. This is one of those recipes that if you are preparing it for adults you don’t want them to see the ingredients, and if you are preparing for kids, you do want them to see the ingredients.

Civeche – Walleye cooked in Lime Juice

Our beaver pilot Rob returned to Toronto a couple of weeks ago.  Before he left he made us some Walleye Civeche.  For guys like me who don’t know fancy terms for food, it is simply walleye cooked in the acid of citrus fruit.  There is no heat involved, only the juice. Bill has “sort of” retired – the way most Doctors do. He still does some assisting in the operating room now and then.
